Sorghum (Sorghum bicolor L.), is a cereal belonging to the grass family. Probably originated in Ethiopia it is widespread in Africa, Central America and South Asia, being the fifth cereal in order of importance after sweet corn, rice, wheat and barley. Sorghum is one of the first plants to be cultivated, it was already known in the greek-roman era.
Sorghum, rich in fiber, is suitable for the preparation of pies and soups, or boiled and seasoned with vegetables and legumes.
