PEAKS BANANA BREAD MIX 250G

No added sugar. Did you know that tigernut flour is made from Chufa. This is a root vegetable and an allergy friendly alternative to nut flour.

INGREDIENTS

flour: (rice, corn, plantain 17%, tigernut 'Chufa'), starch: (potato, corn), raising agent: (disodium diphosphate, sodium bicarbonate), spice blend, thickening agent: xanthan gum, salt.

PREPARATION BANANA BREAD WITHOUT SUGAR

Preheat the oven to 160°C. Chop 125 g dates. Mash 3 ripe bananas in a bowl. Beat 3 eggs in seperate a mixing bowl. Add 115 g soft margarine,70 ml milk, the dates and mashed bananas. Mix everything together, then add the mix and mix until combined. Grease a cake tin and spread the batter evenly over the tin. Place the banana bread in the middle of the oven and bake for 55-60 minutes at 160°C. Leave to cool outside of the baking tin.

Tip: replace the dates with 125g granulated sugar. For a vegan preparation, replace the eggs and milk with plant-based ingredients.
