Brand: Lazzaretti
Since 1936, the Lazzaretti family has been manufacturing and selling pasta in Avignon in Provence. It was in the 1980s that the company started producing organic pasta .
All the tagliatelle and butterflies are cold rolled and very fine, for a taste rendering to the height of the fresh dough and a rapid cooking of 5 minutes. The whole production is dried slowly at low temperature for 12 to 18 hours. This, unlike intensive industrial methods, allows the dough to rest, giving it more smoothness after cooking, and guaranteeing better conservation of nutritional qualities.

The green side at Lazzaretti:
The company's philosophy is based on the need to build together a world more in harmony with nature, respect for the environment, cultures and soils. Lazzaretti does this by marketing products made only from organic and ecological ingredients that do not require pesticides or chemical fertilizers.
It is with this in mind that Lazzaretti has set up local partnerships for several years in order to develop local sectors. This is the case with pasta made from small spelled from Provence, those with millet, large spelled or flax, a way of highlighting and enhancing the soil and encouraging actors in local and French organic farming more generally. to develop their activity.
This has the double effect of shortening the distances traveled by supplies as much as possible and consequently limiting the production of greenhouse gases .
Neither productivity nor the compromises of industrial solutions got the better of the quality of a local product that Lazzaretti has been keen to preserve throughout these years.
