A Japanese twist on a classic Chinese dish 'mapo tofu' [tofu in a spicy sauce]. The recipe is the perfect balance of heat, sweetness & spice. Although typically served with minced pork, it is also delicious when made with peppers. Fluffy & ready-cooked sticky'rice, mapo style sauce & toppings. how to enjoy
Find inside [for 2] sticky’rice, marinade & toppings.
Simply add: tofu, spring onions & peppers [or pork].
To prepare [serves 2]:
Finely chop the garlic, slice the spring onions & cut the tofu & peppers [if using] into bite size pieces.
Heat 3 tbsp of cooking oil in a pan over a medium heat. Add the garlic, peppers [or minced pork] & half of the spring onion. Fry until cooked through.
Add the mapo tofu marinade & tofu, cook for a further 2-3 minutes. Stir in the sesame chilli oil & 2 tbsp of water.
Pierce the film on the rice & microwave for 2 minutes at 800W. Peel back the film & use a fork to break up the rice. Caution: steam will be hot!
Plate up & sprinkle with the crispy topping & the remaining spring onion.
