    Arabica coffee originated in Ethiopia, south-eastern Sudan and northern Kenya, but later became widespread in Yemen, where the consumption of coffee has been traced back as far as 1450. The arabica plants, which require significant water particularly during the full vegetation phase, prosper on land that is between 1000 and 2000 metres in altitude. The higher the plant grows, the greater the organoleptic qualities of the beans. The plant is a small evergreen tree that grows to around ten metres in height, its leaves large (6-12 cm long) and dark green in colour. Its flowers are white and fragrant, while its fruit is referred to as “cherries”. Once ripe, these appear red or violet in colour and typically contain two coffee beans, characterised by an S-shaped groove. Arabica coffee has a rich aroma and is very fragrant, light and slightly sour, with a lower caffeine content than other varieties, like robusta for example, which varies between 0.8% and 1.5%.
